weekend review {Easter in Delta}

Eric and I had planned to go visit my in laws over Easter weekend but his awesome work schedule had him working all weekend. Big time booooo on that one! There aren't many things I love about Delta, Utah (besides my in laws) and if I ever had to live there I'd cry everyday. I'm feeling pretty picked on in our new little town... but seriously, living in Delta would do me in! But that small town knows how to make Easter weekend a gooood time!
He has Eric's eyes and his favorite color is pink? My nephew just might have me wrapped around his fingers!
5... the winning number!
My free bag of groceries!
My nephew knows what's good.... yummy blue cotton candy :)
I got to tag along with my niece and nephews to watch them do some fun Easter egg hunts. I forgot how exciting this holiday is for kids... maybe I need one of my own so I'll stop forgetting? HA HA! After the egg hunt we went to town. The Quality grocery store has a celebration every Easter weekend that is disgustingly good. 25 cent ice cream, 25 cent cotton candy, 25 cent hot dogs, and free soda. You  literally eat yourself sick, ha ha! But it is SO fun! The whole town just hangouts out at the grocery store for the day :) The best part (I know.... what could be better than 25 cent crap??) is that the store will do random giveaways! You scramble to stand on a number and cross your fingers that you'll win. And this girl won! Ok, ok, my win may have been rigged. My sister in law, Amy, told them I was so excited about the store's celebration that I came up without my husband to join in the fun! So they picked my number :) But then Amy won a bag of groceries and that definitely wasn't rigged! We're just a lucky family!
Even though I missed Eric like crazy... I was so happy to spend the weekend with my Brinkerhoff family! What a perfect way to celebrate Christ and everything He has done for us. Because of our Savior's sacrifice we have the opportunity to be with our families forever. I am eternally grateful for my brother, Jesus Christ.

hiking in Kolob

One good thing about this town is that we are surrounded by national/state parks! We bought our first annual national park pass and I'm kind of excited about that! I hope that we will take advantage of the natural beauty we are surrounded with, once the warm weather is here to stay!

the scenic drive
the view
the trail
the rock that he's standing on totally reminded me of the Simba rock- from Lion King? anyway, I tried to talk Eric into crawling up the rock and "roaring" into the wild but he wouldn't do it... ha ha!
we had red cliffs on one side, and this view on the other. amazing.
my face has mistaken me with a 14yr old. won't. stop. breaking out. oh! that's Kolob in the background.

Hopefully our next hike will be in Zion national park! Hiking is about to become our new favorite hobby (whether you like it or not, Eric!) :)

i smile

I have had such a rotten attitude about Eric's crappy night shift schedule (only 4 more weeks.. holllla!) so I decided to write an I smile post to talk about the good things with this schedule.
I Smile...

...because Eric cleans the house so much! I work out of town 2 days out of his work schedule so when he wakes up he is bored out of his mind. So the man cleans. Yay for me :) Oh! He bakes, too! Love that.

...because we go running together on his days off. We've never done that!
This picture is for you and Vinny, Nicole! Eric and I both got a pair of new running shoes :)

...because Eric gets 3 days off one week, and 4 days off the next! His crappy schedule entails 12 hour shifts, 7-7! Poor Eric. But we LOVE having those days off together!

...because we eat amazing breakfasts on those days off! We normally never have time for this!
That little orange totally makes up for the massive donut. YUM!

...because we appreciate our time together more than ever! We get so caught up in our every day routine that we forget to realize just how AMAZING it is to go to sleep next to each other. I don't ever want to forget how amazing Eric is... and this schedule is helping me remember :) I just need to learn how to not be so negative about it!

P.S. Another reason I'm smiling?? I got instagram for my crappy droid :) Yay! I still haven't figured out how to find people to follow yet... but until then... find me :) CourtBrink

little letters

I've been seeing these little letter posts around blogland and I thought it'd be fun to try it out! I'm sure there is a link up somewhere... but I'm the worst at keeping track! I enjoyed writing these so don't be surprised if you see more of these in the future :)

Dear April fool's day, I totally forgot about you! So when I woke up Sunday morning and checked FB and the rest of the social media I'm addicted to... I believed EVERYONE that said they were pregnant! Sad for me.

Dear netflix, why can't you just let us watch the most recent season of Bones? I am not a fan of the waiting game. Hulu wants us to pay them to watch it, but we're already paying for you! So please, I beg, hurry up and get the latest season playin'! On another note, thank you for giving me such easy access to watch all the garbage I could ever want. One Tree Hill, Glee, etc. I love it all!

Dear weather, we have been getting along sooo well! Why did you have to turn nasty on us? Snow, wind, cold temps? REALLY?

Dear woman who backed into our truck, you thanked me for being so sweet about the situation?? Thank YOU for being so honest and leaving a note with your info! It is tragic to think about how little honestly is left in the world these days. There was no room in our hearts to be angry because we were so grateful for that note!

Dear husband's work schedule, I still hate you.

Dear husband, I still LOVE you ;)

Dear ocean, we'll be seeing you in about a month! A week on the beach is just what this girl needs. I can't. wait.

weekend review {junnnnnk food}

We enjoyed a picnic in the back of our truck...
... and enjoyed the view!
Be still my heart.... DQ blizzards are just the BEST!

I can't help it that I crave a Dairy Queen blizzard almost daily. Buy one get one for a buck makes it that much  more tempting!
I can't help it that Eric and I didn't do anything exciting over the weekend... but with the work schedule he has right now? I am cherishing these small moments we have together. I've never felt so giddy to stuff my face full of junk food... with Eric by my side :)

P.S. Clearly we were physically fed over the weekend, but our hearts are full from being spiritually fed as well! I am so grateful we were able to grow together as we listened to General Conference!
