to bake or not to bake

I've held true to my bucket list and I've been slaving away in the kitchen baking my little heart out! And when I say baking my little heart out, I mean I've baked two pumpkin treats so far. That may not sound like much but trust me this is a big deal!
You see, I pretty much have a hate hate relationship with baking. There is no love. I mean sure... I LOVE to eat baked goods. But I love to eat them when other people bake them for me. When I bake it usually results in me thinking very violent thoughts (like wanting to poke my eyeballs out), gets me VERY angry over the mess I just made (adding one more thing to clean to my never ending list), and usually ends with the ugly cry over all the work and effort I just put into the treat that just failed (which has happened more often than not). Baking just isn't my thing! But Eric? He loves it! It relaxes him.

I'll never understand.

But I'm proud to say that I made these cookies and these muffins so far. And they turned out PERFECTLY (even if the pictures didn't). Dang, I'm good!
Next on my list is pumpkin chocolate chip bread! I also want to make pumpkin pancakes and maybe even pumpkin waffles! Oooor I'm totally up for suggestions! I made pumpkin puree (and have more pumpkins from my mother in law, so LOTS of pumpkin) and I am determined to use it all up :) What's your favorite pumpkin bread recipe? Favorite pumpkin anything recipe? I realize I can google and pinterest this stuff... but I need recipes that I know are good before hand. You can imagine how quickly I'll lose it if I slave all day (because it takes all day for me to bake, especially with a mobile baby to keep track of, okay?) and it turns out tasting like crap. So I'm dying for your favorite recipes (or links to the recipe) and if you live close to me, I'll even share the goods ;)

Ohh yum! I love pumpkin everything! Like you though, I totally have a love/hate relationship with baking. I hate the "mess" part, and I'm always so impatient!

Pretty sure the snickerdoodles are the same recipe I used to make mine! Which I haven't blogged about yet...fail! ha Except I didn't add a Hersey's kiss!

Those pictures have me drooling. I want those muffins really, really badly. Also, I can totally relate about the love/hate relationship with baking. It feels like such a chore, but the payout is usually (I do mean usually) worth it.

I know what you mean about the whole baking thing. Although, I've blamed the "tricksy" & "trapsy" (too much Lord of The Ring & reality TV, I swear) ways of the oven for this. It plays with my emotions every time! I've had my fair share of burning and under-baking. Curse ye oven!!!!

Those cookies look super yummy! Fall baking is the best! Did your little help you out? or just enjoy your hard work :)

I found a betty crocker recipe years ago that is easy and makes a LOT of bread/muffins. I double the cinnamon, add fresh nutmeg and skip the walnuts and raisins.

I am salivating just looking at the pictures! I refuse to learn to bake because I think I could be good at it if I try and my husband doesn't have that much of a sweet tooth, which means I would quickly be piling on the pounds!:)
