breakfast for dinner

I love having breakfast for dinner!  There's no way I'm waking up early enough to make this stuff on a week day!  Plus it's such an easy go-to when I can't come up with any ideas!  My mom-in-law has a cookbook made up of family recipes that she gave us and it's wonderful!  I use her waffle recipe and it's so yummy!  I'll post the recipe but first I'm going to tell you about the first time I ever made these.  :)
We'd only been married a couple months when I made these waffles.  It was my first time making waffles from scratch, first time ever.  Of course as a newlywed I was still nervous about making yummy meals for my man, so I was overly excited when I took my first bite and these waffles were just amazing!  I needed praise asap.  So I asked:
me: Aren't these the BEST waffles you've ever had!?
e: (shrugs his shoulders) Yeah, they're good.
me: No way!!  These are the BEST waffles ever!  Especially since this is the first time I've ever made them from scratch, right?!
e:  I said they're good.  I'm used to having them made from scratch though.  That's how my mom always cooks.
me:  (I'm thinking to myself, oh no he DIDN'T!)  Yeah, but these are the B E S T waffles you've ever had right?!  Just say YES!
e:  DO YOU WANT ME TO TELL YOU THEY'RE BETTER THAN MY MOM'S?!  CAUSE THEY'RE NOT!
That was not the answer I was going for.  I just wanted him to tell me those were the best waffles he'd ever had, the first time I asked.  Needless to say, any meal Eric wanted that came out of mom's cook book, he had to cook it.  Hahaha.  He learned his lesson.  It took me awhile, but I'm back to cooking meals out of that cook book :)

How does Eric like my waffles now?  Here I'll translate: " Babe....these are the best waffles I've ever had!  (in creepy voice from Date Night) Now get in my belly!" Please tell me you've seen Date Night and know what creepy voice I'm talking about?!
best waffles ever
2 cups flour
2 cups milk
2 eggs
1 tbsp sugar
1 tsp salt
1 tsp baking soda
2 tsp baking powder
2 tsp vinegar
1/4 cup shortening
Mix first 3 ingredients until smooth.  Add the next 5 ingredients, mix until blended.  Last but not least, mix in the shortening.  Mixture will not be smooth once the shortening is added, but it will be delicious once baked :)  Enjoy!

Love the idea of breakfast for dinner...we used to have that growing up from time to time and my parents called it a "backwards dinner!" :)

Oh Courtney. I just love you to pieces. I'd probably do the same exact thing with Gregg though. I'm glad Eric learned quick though.

haha, oh no he di'nt! i love breakfast foods, but never have time to make it in the morning either! every once in a while i love to go to a really good breakfast buffet...heaven! never saw date nite, but i think that same line was also in austin powers?!!

Oh that is the best thing I've ever heard! I get so mad when my cooking isn't as good as his moms GRRR! I love that you make him make his moms recipes! You go girl!

Ooooh I would never cook again!!! You are much better than me! :) I will definitely have to try them though. I love waffles with nutella and bananas!!!

Okay---is that a smoothie?? With spinach in it? I would LOVE the recipe---and to know if you can taste the spinach. I've been reading about this, but just can't make myself try it!

haha! I can't say I like breakfast food that much, but your pictures DO make them look tasty!

I went back to read your recipe again and decided to read the waffle incident. That is so how things are in our house, I don't cook anything his mom makes because I "make it wrong/funny/weird/different." Boys just need to learn to say yes babe, this is the best I've ever had! :) Afterall, they don't really want us to be exactly like their mom's do they?? Because last I checked they don't like sleeping with them! hahaha! :)
